Buckwheat originates from Central Asia. It was later introduced to Europe during the Migration Period. Prior to the 20th century, it was mainly used amongst less well-to-do farmers in the form of porridge, subsequently vanishing from our diets altogether. It has only been making a comeback over the recent years.
Buckwheat flakes contain no added sugar or additives, yet is rich in fiber and can be used to make a quick, delicious, nutritious breakfast. Give it a try if you’re looking for something new instead of oatmeal!
Significance, effects: Buckwheat retains its valuable nutrients even after the flaking process. Buckwheat is rich in fiber, which not only stimulates digestion and mitigates the symptoms of constipation, but is also advantageous for blood sugar or cholesterol-related conditions. Buckwheat is rich in the amino acid methionine which has a liver-protecting effect. Additionally, it contains high levels of lysine, which is uncommon amongst cereals. It is also a valuable source of vitamins and minerals. Its folic acid, magnesium, potassium and zinc content are noteworthy, with levels of Vitamin B similar to other cereals. Thanks to its antioxidant and flavonoid content, it plays a role in the prevention of heart and circulatory diseases. Additionally, it contains a substance known as rutin that fortifies the walls of capillaries and boosts circulation. It can also play a role in regulating blood pressure.
Use: Buckwheat flakes are softened at an incredibly fast rate. They require no cooking and it’s enough to cover the flakes in hot water and let it set for 2-3 minutes before eating it as porridge. Carob powder, fresh or dried fruits, walnuts or cereal can be added to the flakes, to taste. However, buckwheat flakes aren’t just used for porridge. They can also be used in stuffed vegetables, fritters or even for raw cakes. Buckwheat flakes are also a great choice for making a unique, crunchy breading.
