Sugarcane, the source of cane sugar, grows in tropical and subtropical regions. Interestingly, at harvest time, only the plant's stalk is cut; the plant is not uprooted, allowing it to regrow without the need for replanting—making it a renewable source of sugar. This not only makes cane sugar production cost-effective but also offers environmental benefits.

Cane sugar is extracted from the juice found in the plant's fleshy stalk, and no additives are used during processing. The process separates the fine, crystalline sugar from the molasses (a by-product later used to produce rum), yet some of the natural pigments remain trapped within the sugar crystals, giving the sugar its distinctive, pleasant hue. The more pigment retained in the sugar, the more pronounced its flavor and aroma.
