Mustard is a highly aromatic plant bred from a strain of wild mustard found in the Mediterranean region. The seeds have a yellowish-brownish tone and round shape. It is commonly used as a spice, yet the seeds are also suitable for sprouting.
Significance, effects: Mustard seeds have a high fat content, as well as significant levels of carbohydrates and protein. They also contain a great amount of nitrogen and sulfuric compounds, which result in its characteristically strong aroma. These substances have an irritant effect and boost appetite, the secretion of digestive juices and peristaltic motion. Thus they help overcoming lack of appetite, constipation and digestive conditions. However, they are not recommended for those with sensitive digestion.
Use: The mustard seeds can be ground and used as spice or sprouting the seeds and using several day-old sprouts in salads, side dishes or on sandwiches.
