Significance, effects:
Due to its starch content, brown rice is a major source of energy. The fiber of the rice impedes the absorption of carbohydrates and thus its glycemic index is much lower, making it more suitable for people with diabetes instead of white rice. Additionally, the fiber stimulates peristalsis.
Brown rice has a higher protein and fat content than the white variant. It also contains high levels of Vitamin Bs (with the exception of B12), manganese, phosphorus and iron, yet is low in sodium.
Use: Rinse thoroughly before use. Cook the rice in 2.5-3 parts water in approx. 40-50 minutes. Suitable for use as a side dish, porridge, risotto or in salads, one-pot and casserole dishes, in soups or even for desserts.
