Sorghum pearls are small, round-grained, 100% hulled sorghum seeds. Naturally gluten-free, making them an ideal alternative for those with celiac disease or dieting. Due to their neutral taste, they can be used as a side dish (even instead of tarragon), in salads or as sweet milk sorghum.
Significance, effects: Naturally gluten-free: Celiacs and gluten-sensitive people can safely include them in their diet. High in fiber: Supports digestion and provides a long-lasting feeling of fullness, making them a great choice for dieters. Low glycemic index: Absorbed more slowly than white rice, so they don't spike blood sugar levels. Rich in nutrients: Excellent source of protein, iron, magnesium and B vitamins.
Uses: Sorghum pearls have a slightly nutty flavor and a pleasantly elastic texture (similar to millet or barley pearls).
As a side dish: dry-roast the sorghum pearls until they smell like popcorn, then add five times the amount of water and cook, covered, for about 50 minutes until soft. They are a perfect substitute for rice, bulgur or couscous, with meats and vegetables.
In salads: They also work great as a cold, vegetable-vinegar salad base (like quinoa).
In one-dish meals: You can thicken soups with them or make “sorghum risotto” from them.
For breakfast: They are also good as a sweet porridge when cooked in milk or a herbal drink, with fruits and honey.
