Wheat gluten is an elastic material capable of swelling, allowing us to use wheat flour to bake lovely, tall loaves of bread. Wheat gluten is used to make wheat meat (seitan) by adding the appropriate mixture of spices. Used in fried or baked form, they provide a consistency and taste similar to meat.
